The short answer:

    1.  by changing LOG_MAIL to another facility in the
        call to openlog on line 571 of main.c;

    2.  you can't.  

The long answer: (1) ought to be configurable at run time.
(2) could be added, but I'm not sure why you want to log
to a file, rather than syslog....
